Is there software similar to Windows Complete Backup?

Recently I did a Complete Windows Backup to an external hard drive.
My hard drives are set up in a RAID 1 array, so the 2 x 500GB drives are striped to look like one massive 1TB drive. But I wanted to take away one drive and only have a 500GB drive and use the other one for something else. I wanted to restore my windows backup onto my 500GB drive in the PC. When I did the restoration it said that there are too few drives and gave me an error. It seems the setup I originally had when backing up is the only one the backup will restore to. Which sucks majorly.
Is there another way to do a complete restore where all program files and settings (the lot) are restored? I’ve backed up my music and other files so they aren’t the problem. But starting from scratch will set me back at least 2 weeks.
Anyone know of any sugestions?
I can go back to my original RAID 1 setup and restoring that was a breeze. But only when there is a RAID array.
Go and get Acronis it is simply the best Widows Backup is the worst of the lot.
With acronies you can make a complete copy of the lot and even move everything from and old to a new Hard Drive no problem
